CHILLED FRUIT SOUP

The Zeranskis (2011b) describe Polish cuisine as comforting, refreshing, aromatic, and colourful. Polish soups are no exception, and are enjoyed by Poles for lunch, dinner, and dessert. Noodles are often added to fruit soups to make them a heartier main meal, or they are served as a healthy dessert alternative (Zeranski & Zeranski, 2011a).

Cookbook authors Peter and Laura Zeranski are a retired couple. Polish Classic Recipes is their first cookbook, and it scored 4.4 out of 5 stars on Amazon (Amazon, 2017). Their second book, Polish Classic Desserts, was voted the best Eastern European cookbook in the United States in 2013 (Zeranski & Zeranski, 2011a).

Chilled fruit soup is a simple recipe and took less than ten minutes to prepare. This is fitting considering its original purpose as a quick farmer’s lunch. The soup smelt freshly of strawberries and was a pretty pink in colour.
