We selected Chinese cuisine and a recipe for Dan Dan Mian. This recipe was from Hsuing, Lowe and Simond’s, The Food of China, which was published in 2008 by Australia: Murdoch Books. We selected Chinese cuisine it is very popular and reflects the long history of many unique regional cuisine throughout China. For example, our recipe originates from the southwestern Chinese province of Sichuan. This province is known for its peppercorns which possess hot, spicy and numbing flavours. In China, the population is approximately 1.4 billion and in Canada there are about 1.3 million Chinese Canadians. Therefore, many Chinese Canadians would be interested in our recipe due to the large Chinese population in Canada. In addition, the Chinese population takes up a large chunk of the world’s population so therefore, many people would enjoy our recipe.
