I prepared a recipe for Mini Lebanese Pancakes With Creme - “Katayef Bi Kushta” from Kamal Al-Faquih’s Classic Lebanese Cuisine: 170 Fresh and Healthy Mediterranean Favorites. My final reflections on this project are as follows.

Reading and learning about the Lebanese culture and their overall dedication and passion for food, was one of the most captivating parts of this project. Additionally, learning about the “Marché Adonis” (the specialty Mediterranean store in which I found the Orange Blossom Jam) value chain, as well as its history in Canada was very interesting.

Overall, my classmates enjoyed my Lebanese pancakes, a frequent comment was that they liked that it was “sweet but not too sweet” and they enjoyed the light and fluffy texture. Other students found the presentation to be very appealing and liked the addition of the pistachios, as it added a nice crunch!

At last, my classmates and I, were very pleased with the final outcome and taste of my Lebanese Pancakes. The most difficult part of this recipe was by far the shopping, as there were many ingredients, some of which were not cheap or easily found. Overall, the recipe was not too labor intensive, however it was time consuming, when considering leavening and cooling times.
