DUTCH BOERENKOOL MET WORST (Kale & potato stew)

We selected Dutch cuisine and a recipe for Boerenkool met Worst. This recipe was from Colleen Geske's, Stuff Dutch People Eat,  published in 2016 by Stuff Dutch People Like. This cuisine was chosen because one  group member, Esther, is of Dutch descent and was interested in learning more about her ancestors’ culture and cuisine. Esther grew up eating various Dutch foods, including the recipe described in this exhibit.  Boerenkool, is still a relevant dish in the Netherlands as well as outside the country. Dutch emigrants still make this dish on cool winter evenings, 3  generations later. In fact, the author of the cookbook, Colleen Geske, learned about this dish from the Dutch people when she moved to Amsterdam.  

This exhibit was created by Samuel Tucker-Yates (Year 5, Hotel and Food Administration), and Esther Zantingh (Year 4, Applied Human Nutrition).
