Making it in Canada

BUTTER, CHEESE, AND PICKLED HERRING

Canada is a major producer, exporter and importer of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains.  In this section, I share 3 of my research insights and assess to what extent our recipe can be made from Canadian agricultural and food products.

The top 5 countries in terms of cheese production include the U.S, Germany, France, Italy, Holland, respectively. Canada ranks #11 on that list.

The top 5 barley producing countries are the Russian Federation, France, Germany, Australia, and Ukraine, respectively. Canada ranks #6th

The top 5 countries butter producing countries are U.S, New Zealand, Germany, France and the Russian Federation, respectively. Canada ranks #19 globally for butter production

The cheddar, butter, dill, soft bread, and chives can all be obtained in Canada. It is possible to catch herring on the east coast of Canada, and at one time many people would have pickled their own herring using salt, sugar, vinegar and selected herbs. Canada produces a significant amount of soybeans, so through the fermenting process, soy sauce can be made in Canada

In summary, all of the ingredients need for this dish are produced in Canada.
