Making it in Canada

PORK BARBECUE – GRILLED SKEWERED PORK

Canada is a major producer, exporter and importer of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains. In this section, I share 3 of my research insights and assess to what extent my recipe can be made from Canadian agricultural and food products.

Although pork is produced in large heads in the Philippines, Canada produces more. Canada was ranked 9th in the worlds  top 10 producers of pork in the year 2014 with China being the 1st.

Canada is not well known for the production of garlic. Most of the world's garlic is produced in Asia and China ranked 1st in the top 10 world producers of garlic. Canada produce 638 tons of garlic while the Philippines produced 8,993 tons of garlic in the year 2014. The abundance of garlic explains why Filipinos use lots of it.

In comparison to the worlds best producer of chili, China, Canada produces very low quantities of chili. However, Canada produces more chilies than the Philippines does.

In summary, 5 of the 7 ingredients I needed are produced in Canada, while the other 2 can be purchased without much difficulty. None of the ingredients were not available, and required me to make substitutions.
