Making it in Canada

Canada is a major producer, exporter and importer of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains.  In this section, I share 3 of my research insights and assess to what extent my recipe can be made from Canadian agricultural and food products. 

China was the largest producer of cucumbers in the world as of 2014, while Canada was the 20th.

For garlic, China is also the largest producer in the world. Canada produces garlic, but accounts for very little of world production- it just makes it into the top 100.

Yogurt is produced in Canada, but Greek yogurt may be imported from the U.S.  Many of the yogurt brands found on my shopping trip were labelled as “prepared in Canada”, meaning the whole product was produced in Canada. The Greek yogurt product used in this recipe is from the brand Liberté, a Canadian manufacturer and distributor of dairy products founded in Montreal in the 1930’s. Their products recently became organic which requires specific inputs, for example, making their products without genetic modification and raising their cows according to specific regulations.

In summary, 3 of the 4 ingredients I needed are produced in Canada, while olive oil can be purchased without much difficulty since it is imported.
