Making it in Canada

Canada is a major producer, exporter and importer of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains.  In this section, I share 3 research insights and assess to what extent the recipe can be made from Canadian agricultural and food products.

Canada ranked at #21 on a global scale for milk production in 2014. Within Canada, Ontario and Quebec were the largest producers of milk.

Almost all sugar sold in Canadian stores seems to be refined and processed within Canada. There are two sources for raw sugar; sugarcane (90% of all sugar sold) or beets (Canadian Sugar Institute, 2016). It is likely that the sugar used in 1868 was refined by the Canada Refining Co. Ltd… also known as Redpath Sugar Ltd. – which is still in business today!

Indonesia is among the top 5 producers of both spices, cinnamon and nutmeg. Indonesia produced the second highest amount of nutmeg (Guatemala came in first) and the most cinnamon in 2014.

In summary, 1 of the 5 ingredients I needed are produced in Canada, while the other 4 can be purchased without much difficulty. All the ingredients I chose to use were available at the grocery store.
