TAIWANESE MINCED PORK RICE

PREPARATION

  1. Onions -> Dice them
  2. Peel the skin off, slice them vertically into small strips as then slice them horizontally

TAIWANESE MINCED PORK RICE

  1. Using a fry pan, pour 2 tablespoons of vegetable oil, use medium-low heat to fry the onion. Pan fry the onions till they turn yellowish in colour, and then add in shallots and stir it.
  2. Add in the ground pork, sliced pork shoulder meat, ground pork shoulder meat and pork belly, stir fry it until the surface of the meat changes colour
  3. Add in the soy sauce to bring out the flavour, then add peanut butter, rice wine, rock sugar, white pepper, water and mix the white miso with 40 ml of water before adding it into the mixture. Cook the mixture using low heat.
  4. For the colouring of the dish, use a separate saucepan. Add vegetable oil and rock sugar into the pan and caramelize the sugar. Fry it till white bubbles emerge and float to the surface. Pour the caramelized sugar into the mixture and stir it.

Use low heat to stew the mixture for 1.5-2 hours, which allows the skin of the pork belly to thicken the mixture. Serve by pouring a decent amount on top of a bowl of white rice
