STIR FRIED PORK AND PINEAPPLE

FOR THE PORK

  • 16 ounces boneless pork shoulder, trimmed of fat
  • 2 teaspoons soy sauce
  • 2 teaspoons vegetable oil
  • 2 teaspoon cornstarch

FOR THE SAUCE

  • 4 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 2 tablespoons soy sauce
  • 1 teaspoon salt

FOR THE STIR-FRY

  • 16 pieces black fungus
  • 6 green onions
  • 4 tablespoons vegetable oil
  • 4 tablespoons fresh ginger
  • 16 ounces fresh pineapple, cut into 3/4-inch chunks (about 1 cup)
  • 10-16 rings fresh jalapeno
