IRISH POTATO AND LAMB STEW

We selected Irish cuisine and a recipe for Irish Stew. This recipe was from Malachi McCormick’s Irish Country Cooking which was published in 1988 by Clarkson N. Potter. We chose Irish cuisine because neither of us have ties to this country and we wanted to learn about an unfamiliar cuisine. Our interest in Irish cooking initially came from watching the TV series Downton Abbey, which portrays elements of Irish culture through the character Tom Branson. We chose Irish Stew because it brings together many of the traditional food items seen in Ireland, such as potatoes and lamb. Also, just as Tom is a symbol of political struggle and revolution in the show, the ingredients in Irish Stew can be representative of both a checkered past and (dietary) change.

This exhibit was created by Rebecca DeWetering (year 4, Criminal Justice and Public Policy) and Isabella Gregov (year 3, Applied Human Nutrition).
