SAPPORO MISO RAMEN

 

When it comes to Japanese cuisine, many people think of sushi, sashimi, or the artisan kaiseki, which is very elaborate. However, in the late Meiji period (1868-1912), traditional Japanese household meals had to be made everyday and included ramen and rice roll. The  Japanese believe that fresh and raw foods are nutritious, healthy, and wholesome. 

 

Miso ramen a gusty, heart-warming miso soup with attitude. In the mid 19th century, the new government Meiji encouraged many workers to go north for development. In the chilly winters, garlic and chili oil in the miso soup warmed the bodies and souls of the new settlers (Barber, 2004).
