Making it in Canada

SUMMER ROLLS

Canada is a major producer, exporter and importer of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains.  In this section, we share 3 of our research insights and assess to what extent our recipe can be made from Canadian agricultural and food products. 

According to the Food and Agriculture Organization of the United Nations, China produces more rice than any other Asian country as of 2017. Rice is not listed as an ingredient that is produced in Canada. Therefore, rice is among the ingredients that have to be imported from another country. However, rice is a commonly imported item in Canada. Therefore, rice products can be easily purchased from many Canadian markets, and they can be used for the Summer Roll recipe.

According to the United States Department of Agriculture, as of 2017, China remains as the top pork-producing country in the world in regards to the amount of pork produced. Although Canada is only the seventh biggest pork producer, the advantages of producing any pork at all means that pork can go under the category of Canadian ingredients, which means that Canadian pork can be used in the Summer Roll recipe.

Perilla is minty leaf herb that can be eaten raw or cooked. Perilla is used in many Asian cuisines such as Vietnamese, Japanese, Thai, and Korean cuisine. Also, aside from its culinary uses, perilla also has medicinal purposes as well. In China, perilla is used in Traditional Chinese Medicine as a remedy for symptoms of the common cold.

In summary, 9 of the 13 ingredients we needed are produced in Canada, while the other 4 can be purchased without much difficulty. All of the ingredients were available; therefore, we made no substitutions.
