KEFTA TAGINE WITH TOMATOES AND EGGS

KEFTA

  • 1 lb lean ground beef
  • 3 tbsp. crème fraiche
  • 2 tbsp. grated onion (recommend using a food processor)
  • 2 garlic cloves
  • 1 ½ tsp sweet paprika
  • 1 tsp ground cumin
  • ¼ tsp cinnamon
  • Pinch of ground ginger
  • Pinch of mace or grated nutmeg
  • Pinch of cayenne
  • 1 tsp salt
  • 1 packed tbsp. roughly chopped cilantro

 

TOMATO SAUCE

 

  • 2 tbsp. extra virgin olive oil
  • 1 small red onion
  • 2 garlic cloves
  • 2 tbsp. tomato paste
  • 1 ½ pounds Roma tomatoes, grated (recommend using a food processor)
  • 1 ½ tsp paprika
  • ¾ tsp ground cumin
  • ¼ tsp sugar
  • 4 large eggs
  • 1 tbsp. flat leaf parsley
  • Salt and pepper to taste
