KEFTA TAGINE WITH TOMATOES AND EGGS
KEFTA
- 1 lb lean ground beef
- 3 tbsp. crème fraiche
- 2 tbsp. grated onion (recommend using a food processor)
- 2 garlic cloves
- 1 ½ tsp sweet paprika
- 1 tsp ground cumin
- ¼ tsp cinnamon
- Pinch of ground ginger
- Pinch of mace or grated nutmeg
- Pinch of cayenne
- 1 tsp salt
- 1 packed tbsp. roughly chopped cilantro
TOMATO SAUCE
- 2 tbsp. extra virgin olive oil
- 1 small red onion
- 2 garlic cloves
- 2 tbsp. tomato paste
- 1 ½ pounds Roma tomatoes, grated (recommend using a food processor)
- 1 ½ tsp paprika
- ¾ tsp ground cumin
- ¼ tsp sugar
- 4 large eggs
- 1 tbsp. flat leaf parsley
- Salt and pepper to taste
