Making it in Canada

VIETNAMESE RICE PAPER SALAD ROLLS

Canada is a major producer, exporter and importer of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains.  In this section, we share 3 of our research insights and assess to what extent our recipe can be made from Canadian agricultural and food products.

Rice wrappings are made in many parts of Asia, which is then exported to Canada to be re sold. Making rice wrappers is a fairly easy process of molding rice together to form a hard plastic like paper which then gets soaked and used as a wrap.

 

Pork is produced in much of Canada. Pork varies from free range pigs to more mass-produced pigs, which are much more important in terms of total production. Pork varies in quality and price. Pork is essential for this recipe as it is the main source of protein and carries tons of flavour.

 

Lettuce is also grown in many parts of Canada. There are many different types of lettuce and they vary in flavour. We used butter lettuce in our recipe which is a very popular type of lettuce and is easily found in a local grocery shop.

 

In summary, 5 of the 6 ingredients we needed are produced in Canada, while the other one (rice paper) can be purchased without much difficulty. None of the ingredients were not available, and required us to make substitutions.
