MEXICAN RUSTIC CORN GUACAMOLE

I selected Mexican cuisine and a recipe for Rustic Corn Guacamole. This recipe was from Pati Jinich’s, Mexican Today, which was published in 2016 by Houghton Mifflin Harcourt Publishing Company. I chose to make a Mexican dish because Mexican food is one of my favourite types of food, and I make a lot of it. I chose to make guacamole specifically, because I make it often and I was interested to learn a new way of making it. It is a versatile dish, as it can be eaten as a snack with chips or veggies, and it can also be used as a topping for a variety of dishes like fajitas, nachos, quesadillas, and burritos. I believe that this Rustic Corn Guacamole dish is representative of authentic Mexican cuisine, as all of the ingredients in it are Mexican food staples. The exhibit was created by Lyndsay Hall (4th year, Applied Human Nutrition).
