Making it in Canada

GUACAMOLE

Canada is a major producer, exporter and importer of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains.  In this section, we share 3 of our research insights and assess to what extent our recipe can be made from Canadian agricultural and food products.

For avocados, the major countries responsible for production are Mexico, Indonesia, Dominican Republic, Columbia, and the US respectively. However, none were produced in Canada commercially as the fruit cannot handle the cold climates.

For shallots, the major countries responsible for production are Japan, Korea, China, New Zealand, and Nigeria respectively.  However, none were produced in Canada, as our climate does not suit the necessary growing requirements for shallots.

For jalapeno peppers, the major countries responsible for production are China, Mexico, Turkey, Indonesia, and Spain respectively. However, it is notable that they are mainly produced in Mexico and India. Therefore, all the ingredients for this recipe were imported into Canada in order for me to prepare and enjoy it.

In summary, 1 of the 5 ingredients I needed are produced in Canada, while the other 4 can be purchased without much difficulty. None of the ingredients were not available, no substitutions needed to be made.
