About this recipe

This recipe for potato croquettes can be quite bland. We attributed this to the age of the recipe and we think a modern version would have more ingredients to increase taste. We adjusted the amount of salt, sugar and nutmeg to create a more savoury taste in the dish.

This recipe was unclear on what kind of potato to use. With multiple potatoes available at our local store, we decided on Yukon gold as we think it has a nice taste and texture. Yukon gold potatoes were certainly not available in 1910 since they were developed at the University of Guelph many years later

Auguste Mario’s Easy French Cookery was intended for British housewives who were interested in expanding their culinary tastes into French cuisine. The ingredients and steps are kept simple enough for them to understand, but the language is meant for a reader with prior knowledge and experience in cooking.
