Making it in Canada

THE BIRD THAT FLEW AWAY

Canada is a major producer, exporter and importer of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains. In this section we share 3 of our research insights and assess to what what extent our recipe can be made from Canadian agricultural and food products

Smen has evolved as a way to keep a tasty cooking fat around for a long time. It is known for its pungent aroma and distinctive flavour enhancing many dishes. Smen is sold widely in Morocco, and is used for a variety of reasons including making couscous, as a spreadsfor different breads and to enhance the flavour of coffee. 

Paprika production in Malawi is  dominated by small-scale farmers and few commercial producers. A major constraint the small farmers face is access to market information and price. Paprika is grown by small holder producers who sell dried chillies to large scale traders

India is the largest producer for many of our ingredients (chickpeas, butter, turmeric and coriander). These ingredients meet Indian demand for natural colours and flavours 

In summary, 5 of the 9 ingredients we needed are produced in Canada, while the other 3 can be purchased without much difficulty. One of the ingredients were not available, and required us to make substitutions.
