Making it in Canada

Canada is a major producer, exporter, and importer of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains. In this section, we share 3 of our research insights and assess to what extent our recipe can be made from Canadian agricultural and food products.

 

Smoked Sausage: Canada is the 7th highest pork producer in the world. Smoked sausage is readily available in Canada, and there are many options available, from imported sausage to sausage produced locally. The smoked sausage we used in our recipe is from Saskatchewan, Making it both delicious, and local!

 

Kale: The kale we purchased is from California, but kale is another ingredient that is both produced in Canada, as well as easy to find. Data for kale production specifically is hard to find, but it is included in the family of "cabbage and other brassicas". Canada produces over 200,000 metric tons of these brassicas (including kale) each year.

 

Potatoes: The potatoes we used were also Canadian grown. Canada is the 16th highest grower of potatoes in the world, and produces over 4.5 million metric tons of potatoes each year. Interestingly, the Netherlands, where this recipe comes from, is the 9th largest potato producer, despite their small size. So, whether you want to make the recipe in Canada, or in the Dutch homeland, finding potatoes will be no problem.

 

In summary, all the ingredients we needed are produced in Canada, and all can be purchased without much difficulty. As such, we were not required to make any substitutions.
