TZATZIKI

  • Put yogurt in a cheesecloth-lined sieve over a bowl. Drain several hours or overnight in the refrigerator.

HAND METHOD

  • Peel the skin from the cucumbers
  • Cut the cucumbers in half and remove the seeds with a spoon. 
  • Coarsely grate cucumbers and drain well using a sieve and paper towel.
  • Add garlic, vinegar, olive oil, salt, and pepper to cucumbers and mix well.
  • Add drained yogurt and blend.
  • Serve with pita.

FOOD PROCESSOR METHOD

  • Peel the skin from the cucumbers
  • Cut the cucumbers in half and remove the seeds with a spoon. 
  • Coarsely grate cucumbers and drain well using a sieve and paper towel.
  • Add garlic, vinegar olive oil, salt, and pepper to food processor and pulse with a quick on-off.
  • Place in a bowl and combine with cucumber and yogurt.
