RUSTIC CORN GUACAMOLE

  • 2 garlic cloves, unpeeled
  • 1 jalapeño pepper (seeded if desired, or more to taste)
  • ¾ cup thawed frozen corn kernels
  • 1 TBSP freshly squeezed lime juice
  • ¾ TSP kosher salt, or to taste
  • 2 large ripe avocados, halved, pitted, flesh scooped out and coarsely mashed or diced
  • ¾ cup grape tomatoes; quartered
