We selected Vietnamese cuisine and a recipe for Summer Rolls. This recipe was from Pauline Nguyen’S, Luke Nguyen and Mark Jensen’s, Secrets of the Red Lantern: Stories and Vietnamese Recipes from the Heart, which was published in 2008 by Andrew McMeel Publishing, LLC.
We were interested in Vietnamese cuisine because Vietnamese dishes often use ingredients from each food group. For example, in most Vietnamese recipes they combine ingredients such as such as vegetables, rice, and meat together. We were specifically interested in a Gỏi Cuốn (Summer Roll) recipe because it is relatively healthy, very flavourful, simple to make, and inexpensive. Also, most of the ingredients are easy to find at Canadian grocery stores, with the exception of a few special ingredients that can be bought at Vietnamese supermarkets.
