APPLE TART FROM MADRID

Spanish cuisine is special in that each major city is greatly influenced by the cuisine of neighboring areas, with each area being influenced by diverse pasts and agricultural distinctions. Madrid, specializes in sweet desserts. The apple tart falls perfectly within the type of regional cuisine that Madrid is renowned for, which is their extensive selection of traditional pastries and desserts. 

The cookbook itself is written by an American woman who spent most of her youth in Spain learning about their cuisine and culture. Penelope, the author was doing a semester abroad when she met her husband, a Spaniard. The time she spent with his mother was crucial to the conception of her cookbook. His mother taught her all about Spanish cuisine and inspired a considerable number of the recipes found in the cookbook.

Our recipe, the apple tart from Madrid combines the opulent flavors of lemons and apples, two unlikely ingredients to be seen together, to create an interestingly amazing sweet but tangy tart.
