Based on my analysis, it seems that this recipe could be part of a healthy diet and eaten once per week. It is a good source of calcium, potassium, niacin, and folate; however, it contains excessive amounts of saturated fat and sodium. The amount of salt added could be decreased and/or low-fat coconut milk could be used so that this recipe could be enjoyed on a more regular basis, without causing health concerns.
