I picked Sumayya’s Usmani, “Summers Under the Tamarind Tree: Recipes and Memories from Pakistan” because the author’s story resonated with me. Usmani’s cookbook is one of two Pakistani cookbooks currently available in Canadian stores.  The author’s motivation for writing was to introduce the world to the flavors of her childhood. 

Just like the author, I wanted to introduce Pakistani flavors to the world. While working on this recipe, I found out a lot about many things about Pakistani cuisine. I learned that Pakistani cuisine is a blend of many cultures. This recipe in particular is influenced a lot by Persian cuisine.

Since I was unfamiliar with cooking with beef, I had to go through several trials to get this recipe right. A great fact that I learned in my many trials with this recipe is that it complements everything, from rice to burgers to salad.
