DUTCH, MEAT CROQUETTES  

Part A: Meat Recipe

  1. Let beef stew until soft and tender.
  2. Chop or grind the beef into fine strips/chunks. Prepare dough recipe as shown below.

Part B: Dough Recipe

  1. Melt butter/margarine in a pan, add flour, and stir to a boil.
  2. Alternate adding butter/margarine and flour for approximately 10 minutes, or until desired consistency is achieved. 

Part C: Mix and Prepare

  1. Mix dough with the beef and herbs, and let the mixture spread out on a plate to become cold and almost stiff.
  2. On a spoon, put about one eighth of this mixture and make it as smooth as possible with another spoon to form a croquette shape.
  3.  Roll in flour, then breadcrumbs, then egg (lightly beaten with milk), then through breadcrumbs again. 

Part D: Fry & Garnish

  1. Pan 3 to 4 croquettes simultaneously in hot frying fat until they are golden brown and crisp. Make sure that the croquettes are completely covered by the frying fat.
  2. Take the croquettes out of the frying fat and leave them on a paper towel.

Stack on a dish garnish with sprigs of baked parsley. Serve.
