DUTCH, MEAT CROQUETTES
Part A: Meat Recipe
- Let beef stew until soft and tender.
- Chop or grind the beef into fine strips/chunks. Prepare dough recipe as shown below.
Part B: Dough Recipe
- Melt butter/margarine in a pan, add flour, and stir to a boil.
- Alternate adding butter/margarine and flour for approximately 10 minutes, or until desired consistency is achieved.
Part C: Mix and Prepare
- Mix dough with the beef and herbs, and let the mixture spread out on a plate to become cold and almost stiff.
- On a spoon, put about one eighth of this mixture and make it as smooth as possible with another spoon to form a croquette shape.
- Roll in flour, then breadcrumbs, then egg (lightly beaten with milk), then through breadcrumbs again.
Part D: Fry & Garnish
- Pan 3 to 4 croquettes simultaneously in hot frying fat until they are golden brown and crisp. Make sure that the croquettes are completely covered by the frying fat.
- Take the croquettes out of the frying fat and leave them on a paper towel.
Stack on a dish garnish with sprigs of baked parsley. Serve.
