Making it in Canada

Canada is a major producer, exporter and imported of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains. In this section, we share 3 of our research insights and assess to what extent our recipe can be made from Canadian agricultural and food products.

Rice is the main ingredient and base of our recipe. According to the Food Agriculture Organization (FAO) site, we learned that China produces and processes the largest quantity of rice worldwide  Eggs are the  ingredient that tops off our dish. According to FAO, China is once again the largest producer and processor of this ingredient. However, the eggs we used were farmed in Canada and not imported.

The main seasoning of our dish is the gochujang (red chili paste), which is a product the comes from Korea and can be bought in Asian supermarkets in Canada.

In summary, 7 of the 17 ingredients we needed are produced in Canada while the other 10 ingredients can be purchased without much difficulty. One of the ingredients was not available (bracken), and required us to make a substitution (shiitake mushrooms).
