Making it in Canada

SWEET POTATO CURRY

Canada is a major producer, exporter and importer of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains. In this section, we share 3 of our research insights and assess to what extent our recipe can be made from Canadian agricultural and food products.

India is not within the top ten producers of mustard seed which is very surprising since it is a staple ingredient in curries and curry powder. Canada is actually the number one producer of mustard seed which may explain why Indian cuisine, especially curry, is so popular in our country. With Canada being the top producer of mustard seed that means that it is less expensive than other ingredients and more accessible in Canada.

India produces the second most amount of garlic in the world. While Canada produces some garlic, much of it is imported to serve the demands across the whole country. So relatively speaking, garlic may be more expensive than other ingredients.

Canada imports most of its sweet potatoes. This may raise food prices and make this ingredient less accessible for Canadian citizens. China is the top producer of sweet potatoes and the main exporter as well.

In summary, 7 of the 9 ingredients we needed are produced in Canada and all others can be purchased without much difficulty.
