WIENER SCHNITZEL

  • 6 veal cutlets
  • Lemon juice (optional)
  • Salt
  • ½ to 1 cup flour
  • 3 eggs
  • 2 tbsp. salad oil (optional)
  • 1 generous cup dry, fine bread-crumbs
  • 4 to 5 tbsp. butter or shortening 

WHITE SAUCE

  • 4 tbsp. butter
  • 1 small onion
  • 4 tbsp. flour
  • 2 cups cold milk
  • Salt to taste
  • Pepper to taste
