Making it in Canada

EGGPLANT QUICHE.

Canada is a major producer, exporter, and imported of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm based value chains. In this section, we share 3 of our research insights and asses to what extent our recipe can be made from Canadian agricultural and food products.

Eggplant is the most important ingredient in this recipe. We found that eggplant is mostly produced in parts of South Asia, South Africa, Australia, New Zealand. However, our eggplant was produced in the U.S.

Eggs are also important in our recipe, and are purchased in many Canadian households. The eggs we purchased were produced in Canada.

Lastly, we decided to focus on the cheese in our recipe – specifically parmesan – since this is seen in many French cuisine dishes. Canada does produce some parmesan, but most of this special cheese is produced in other countries, particularly France and Italy.

In summary, depending on the seasons all 3 ingredients we needed are produced in Canada. At other times of the year, the eggplant has to be imported. People may also prefer imported Parmesan. However, all the ingredients are readily available in Canada, and no substitutions are required unless they are made for personal preferences.
