EGGPLANT QUICHE.

Prepare the Eggplant.

  • Peel and cut into ¾ inch squares.
  • Add eggplant to a frying pan with olive oil, for 5-8 minutes until lightly browned.
  • Toss in scallions and garlic, and lightly fry.
  • Take out the eggplant mixture, and drain excess oil.

Bake the Quiche.

  • Preheat oven to 375 degrees.
  • Put cooked eggplant into pastry shell.
  • Blend with herbs and half of the cheese mix.
  • Pour over the filling mix to 1/8 inch of the rim.
  • Spread on remaining cheese and butter.
  • Bake 30-35 minutes until puffed and brown.
