WILTED WATERCRESS SALAD

  • Boil potatoes
  • Cut stems off watercress and sauté the watercress in vegetable oil
  • Mince garlic and finely chop onions
  • Fry garlic, onions, and vegetable oil together
  • Near the end, add crushed toasted corn kernels to slightly soften
  • Once potatoes are done, mash with watercress, and the garlic, onion, vegetable oil mixture
  • Add a pinch of salt, and serve as a side or meal
