Ingredients

EGGPLANT QUICHE.

  • ½ pound of shiny firm eggplant
  • ½ tsp salt
  • 1 Tbsp. olive oil
  • 2 Tbsp. minced scallions
  • 1 clove minced garlic
  • 3 Tbsp. parsley
  • ¼ tsp thyme
  • 1/3 cup grated cheddar/parmesan
  • 3 eggs/ ½ cup of cream – quiche filling
  • 8-9inch prebaked pie shell
  • 1 ½ Tbsp. butter
