Making it in Canada

Canada is a major producer, exporter and importer of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains. In this section, we share 3 of our research insights and assess to what extent our recipe can be made from Canadian agricultural and food products.

Burnbrae Farms is a 5th generation Canadian family-owned and operated company that is one of Canada’s leading egg farmers. The particular carton of eggs that we bought for this recipe happened to come from the USA. However, since this is rare, we will still include this ingredient as one that is indeed produced in Canada!

Neilson, fresh 35% whipping cream is produced in Canada, specifically at the Saputo Dairy factory in Georgetown, Ontario (as said on the label). Interestingly, in 2008, Saputo gained activities of Neilson Dairy, the dairy division of Western Foods in which manufactured, sold and distributed liquid milk and cream in Ontario. Organic Valley offers Heavy Whipping Cream which contains a minimum of 36% butterfat, this heavy cream is USDA approved to be organic and is of course Non-GMO.

Selection, unsalted butter is also a product of Canada. The butter is branded with the 100% Canadian Milk TM logo on the front of the package.

In summary, 5 of the 7 ingredients we needed are produced in Canada, while the other 2 – Madeira wine and allspice – can be purchased without much difficulty.
