RUSTIC CORN GUACAMOLE

I prepared a recipe for Rustic Corn Guacamole from Pati Jinich’s, Mexican Today. My final reflections on this project are as follows. I enjoyed doing this project as it allowed me to learn more about Mexican cuisine, and a new way to prepare guacamole. I learned that at least two of the ingredients in this recipe, avocados and limes, are not produced in Canada, which I found interesting. My classmates really enjoyed my dish, their only criticism being that it could use some more spice (jalapeño). They all believed it was representative of Mexican cuisine. Overall, I think this recipe is fairly inexpensive and easy to make, as it does not require many ingredients, and they can all be easily purchased.
