TZATZIKI

Tzatziki is a popular meze or appetizer in Greece. Serving it with pita rather than crackers makes this recipe especially authentic since pita is traditionally dipped in tzatziki.

The authors of this cookbook are 30 women from St. Paul’s Greek Orthodox Cathedral in Hempstead, New York. This community cookbook was created to fundraise for their church. This cookbook contains both the original, traditional recipes and the modernized versions which use food processors and blenders.

This tzatziki is a traditional Greek family recipe and is considered a cold appetizer. Some changes were made to the original recipe. For example, I used Greek yogurt instead of regular yogurt for a creamier consistency and higher protein content. However, draining the yogurt may have only been necessary if I used plain yogurt to prevent a runny consistency. I also decreased the amount of garlic by half to improve the taste.
