I selected Japanese cuisine and a recipe for onigiri (rice parcels). This recipe was from Takayuki Kosaki and Walter Wagner’s Authentic Recipes from Japan, which was published in 2005 by Periplus editions. Japanese cuisine has always been a favourite of mine, as I consider it comfort food. I grew up eating a variety of Japanese dishes because my parents also loved to indulge in Japanese cuisine. One of the many delicious foods I have eaten countless times is onigiri. I selected this recipe, not only based on its tastiness, but because of its sheer simplicity and variations. Onigiri are rice balls that can be filled with virtually anything! You can find onigiri almost anywhere in Japan—mainly in convenience stores and in children’s bento lunch boxes.
