Making it in Canada

COLD LEMON CHICKEN

Canada is a major producer, exporter and importer of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains.  In this section, we share 3 of our research insights and assess to what extent our recipe can be made from Canadian agricultural and food products. 

Although Canada has large consumption of chicken, it mostly produces only what Canadians need. 

Canada does not grow lemons or limes. The lemons we used were imported from Mexico.

Canada is among the world’s top mushroom producers.

In summary, only a few of the ingredients we needed are mainly produced in Canada, but all could be purchased without much difficulty, after we made a substitution for 1 of the ingredients – a certain type of mushroom.
