BUTTER, CHEESE, AND PICKLED HERRING
- Browned butter: Melt the butter in as saucepan over a medium heat. Stir and heat until golden brown. Pour into a small bowl and add the soy sauce. Set aside to cool.
- Pre-heat the oven to 150 C. Cut the think bread into smaller pieces and toast in the oven for 5-7 minutes until hard. Leave to cool.
- Once the butter has cooled, whip into a creamy consistency. This takes about 5 minutes.
- Spread a layer of soy butter onto the bread. Slice or cut the cheese, and place on the bread with the herring pieces
- Top with finely shopped chives and a few sprigs of dill.
