SWEET POTATO CURRY

The Indian cuisine is known for its delicious taste because of the use of many spices. Recipes differ between regions within India and every region is known for a specific kind of flavour. 

This cookbook covers recipes from the daily menu of the monks, based on the Indian cuisine influenced by Jaffna-styles. Since the Monastery is situated in Hawaii, it is influenced by geographic factors like lower availability of Indian ingredients or different taste preferences.

The sweet potato curry is an adjusted Aloo (Indian for potato) dish. Aloo dishes consist of spices, potatoes, vegetables and a liquid source. Sweet potatoes and bell peppers are used instead of regular potatoes or more common vegetables like cauliflower or spinach. Cow’s milk is used as liquid source but usually most Indian recipes are vegan. This is a good example of the endless possibilities of adjusting recipes to your preference.
