WILTED WATERCRESS SALAD

I prepared a recipe for the wilted watercress salad from the Allin and Sumak Mikuy, Traditional High Andean Cuisine Cookbook. The most interesting thing I learned was the recipe was a version of mashed potatoes instead of a traditional salad! My classmates enjoyed this recipe, positively commenting on the garlic flavour and the unique crunch of the toasted corn kernels. Overall, I would rate this recipe highly, on the relatively accessible shopping, simple preparation and the unique, wonderful flavour.
