YESIMIR MEREKHE– BROWN LENTIL STEW

We prepared a recipe for brown lentil stew from The Traditional Ethiopian Cuisine by Hirut Campbell. Our final reflections on this project are as follows. The most interesting aspect of our experience was learning about different Ethiopian customs and that Ethiopian cuisine includes simple, natural and healthy recipes which can also be very tasty, hearty and cheap! Many students were turned off by the unappetizing appearance but were then very surprised with its amazing flavour. Many also mentioned that they don’t normally cook with lentils or had never tried them before, but after trying our stew they were tempted to cook with them! This recipe would be great for a busy individual on a budget or someone trying to cut down on their meat consumption. However, we would absolutely recommend this dish to anyone looking for easy recipes that are quick, low cost, healthy and tasty!
