RUSTIC CORN GUACAMOLE

Canada is a major producer, exporter and importer of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains. In this section, I share 3 of my research insights and assess to what extent my recipe can be made from Canadian agricultural and food products.

Avocados are a definite staple of a Mexican diet, which can be supported by the fact that Mexico is the top producer of avocados worldwide, and by the fact that the avocados I used to make this dish were labeled to be from Mexico. Canada does not produce any avocados, therefore, without being able to import avocados, it would not be possible to make this dish in Canada.

Limes are another staple ingredient of a Mexican diet. Mexico is the second top producer of limes worldwide. The limes I used to make this dish were also labeled to be from Mexico. Canada is also not a producer of limes, therefore, without being able to import limes, it would not be possible to make this recipe in Canada.

Garlic is another ingredient commonly used in Mexican cooking, however, and maybe surprisingly, Mexico does not rank in the top 10 garlic producing countries. It is actually #27 on the list of producers worldwide, and Canada is #84; therefore, it would be possible to make in Canada without importing. The garlic that I used to make this dish was labeled to be from China, which makes sense as it is the top producer of garlic worldwide.

In summary, at least 3of the 7 ingredients I needed are produced in Canada, while the other 4 can be purchased without much difficulty. None of the ingredients were not available, and required me to make substitutions.
