COLD LEMON CHICKEN

  • 8 Chinese Black mushrooms
  • 1 tablespoon peanut oil
  • ¼ cup sugar                           
  • ½ tablespoon salt or to taste
  • ¾ cup chicken stock             
  • ¼ cup finely shredded ginger-root
  • ½ cup lemon juice               
  • ¼ cup seeded and shredded fresh hot peppers
  • ½ teaspoon light soy sauce     
  • 2 tablespoons grated lemon rind
  • 2 whole chicken breasts
