BISKUITROLLE (Swiss Roll)
- Beat the eggs and egg yolks in a mixing bowl with a mixer (stir bars) at the highest level for 1 min until the eggs become frothy.
- Mix the sugar with the vanilla sugar and beat for a further two minutes.
- Mix in the flour and the baking powder then mix briefly at the lowest level.
- Spread the dough on the baking sheet and bake for 15 minutes
- Immediately remove the parchment paper with dough form the baking sheet place it on the work surface and allow to cool with the parchment paper.
- Pass the jam through a sieve. Remove the pastry from the work surface and carefully pull off the baking paper, possibly remove the dark baking skin. Evenly sprinkle the biscuit with jam.
- Roll up the biscuit from the longer side and keep it cool.
- Sprinkle the roll with powdered sugar before serving.
