Making it in Canada

Canada is a major producer, exporter and importer of an immense variety of agricultural and food products ranging from processed foods with global value chains to local, farm-based value chains.  In this section, we share 3 of our research insights and assess to what extent our recipe can be made from Canadian agricultural and food products.

The first ingredient is garlic. Based on 2014 data, China is the world’s largest producer of garlic. Garlic is also produced in Canada, in much smaller amounts.

The second ingredient is pork. Based on 2014 data, China produces far more pork any other country. The use of modern technology is improving the quality and quantity that is being produced.

The third ingredient is Pepper (piper spp.). We used a specific type of pepper “Sichuan peppercorn” which originated from the Sichuan province of China. Based on 2014 data, Asia produces over 80% of the world’s pepper.

In summary, 10 of the 14 ingredients we needed are produced in Canada, while the other 4 can be purchased without much difficulty. None of the ingredients were not available, and required us to make substitutions.
