SWEET POTATO CURRY

We prepared a recipe for sweet potato curry from Satgury Sivaya Subramuniyaswami, Monks’ Cookbook. Our final reflections on this project are as follows.

The most interesting thing we learned was that Indian cuisine contains many variations to their recipes and that you can substitute many ingredients to create new tastes, such as what we did with the sweet potatoes. Most classmates really liked the sweet potato instead of regular potato as one student said, “It gives the recipe an interesting flavour and makes the recipe more familiar since everyone knows the taste of sweet potato.” We really enjoyed making this recipe as it we got to experience cooking with some new ingredients!
