CHICKEN PAPRIKASH
Canada is a major producer, exporter and importer of an immense variety of agricultural food products ranging from processed foods with global value chains to local, farm-based value chains. In this section I share 3 of our research insights and assess to what extend our recipe can be made from Canadian agricultural and food products.
China is the largest producer of chicken, and if you include Hong Kong’s economy within China’s they also make up the largest consumer of chicken in the world. Thankfully my chicken didn’t need to travel over oceans to reach my plate as I got my chicken close to home from Brampton Ontario. Canada produces more than enough to feed every Canadian with fresh chicken.
Onions seem to be an element in almost all European cooking due to theirits tenderness when cooked and unique sweet, acidic flavor that onions can add in a dish. Again, China ranks in as the largest producer of chicken, however due to the time of year my onions most likely came from Brazil or Mexico.
Last, my dish needed another very prevalent ingredient, tomatoes. Again, the tomatoes I used were most likely from either Mexico, or Brazil. To my surprise, the Netherlands is the largest producer of tomatoes for greenhouses tomatoes which are produced all year round.
In summary 8 of the 9 ingredients I needed are produced in Canada, while the other can be purchased without much difficulty. None of the 9 ingredients were not available, and required me to make substitutions. Although this wasn’t needed in the recipe I would have liked to purchase ‘noodlie’ pasta to serve with my dish.
