EGGPLANT QUICHE. 

We prepared a recipe for Eggplant Quiche from Julia Child’s -- From Julia Child’s Kitchen. Our final reflections on this project are as follows. We learned that a delicious, different meal doesn’t have to be complicated. Many of our classmates enjoyed the incorporation of different flavours, even if some people didn’t think very highly of eggplant. Others really enjoyed the eggplant, texture and lightness of the quiche itself and liked how this was a different alternative to a regular quiche tart. Overall, we think the quiche came out very well.
